I went grocery shopping last night and finalized the menu. We will be having
Shrimp and scallop tortellini (recipe above somewhere) on Christmas day. With a Spinach salad and balsamic vinaigrette dressing. Along with that, there will be crescent rolls and pineapple carrots. Dessert… eggnog and Polish apple cake with cream cheese icing.
On Christmas Eve, we will be having cheese, crackers, hard salami, beef sausage, vegetable tray and a homemade cheeseball (I had to promise not to add salmon this time because last time I added too much).
On New Years Eve we will be snacking on Shrimp cocktail, crackers, cheese, sausage, veggies, popcorn and apples (you gotta try apples and popcorn together… they go better than peanutbutter and celery) with sparkling cider.
On New Years day I got out voted… everybody wants chilli… including a kid who just seems to show up when I make it… and he lives in MO about 6 hours away!
My ds went shopping with me last night and talked me into buying 10# of chicken leg quarters… and we marinated them as soon as we got home… half in wine and Italian seasoning, and the other in hot sauce and buffalo wing sauce. Then he picked up stirfry mix and asked that I use left over turkey in the fridge and make stirfry and rice with it… wow! This is my 18 yo son that only usually likes to cook eggs and potatoes (he says because he is Irish). He also insisted on buying cabbage, turnips and potatoes. I think his heritage is showing
Now… where to find time to make more cookies… I guess I made them too early this year… they are all gone now! No Kidding… 6 dozen sugar, 4 dozen peanutbutter, 4 dozen gingerbread, God knows how many chocolate chip… gone all gone!!!
