What Church Council declared that Mary is the Ever-Virgin? I know it was around 600s.
 
It wasn’t so much declaring or defining the perpetual virginity of the Theotokos at Ephesus (which was actually concerned with the title Theotokos), but this was mentioned in passing as something that clearly was believed and not in dispute.
 
Diggerdomer appears to have it right. The Lateran Council of 649 formally declared the perpetual virginity of Mary. Earlier councils addressed other Marian dogma, but mostly in conjunction with the divinity of Christ and the Trinity. This dogma was also reaffirmed in Vatican II. That is a quick synopsis of what I found in a couple of Catholic reference sources.

Like it is going to dissuade us from any devotion of Her. I usually find it insulting and offensive. They do not have to believe, however at least they could respect our beliefs.

I’ve often wondered what kind of hang up about sex some people must harbor in order to be so vehemently opposed to the idea that the Blessed Virgin remained a virgin throughout her life.

It’s not about sex, I think, it’s about opposing anything the Church teaches.
If, at the time of the Deformation, Catholic churches were filled with plain crosses I’m sure there would be crucifixes in all protestant churches today.

That’s something I don’t understand about such Protestants considering that the founding fathers of Protestantism ( Luther, Calvin and Zwingili) all declared in writing that Mary was a perpetual virgin.

I think we should keep in mind the main idea of Protestantism. It’s because they are protestants. The founding father protested against the Catholic Church. Their followers were Protestants too so they protested against anything even against the founding fathers. As long as they are Protestants, they will keep protesting against each other and creating more and more denominations.
