When David called out to the Lord he said " I have sinned against you Lord, and only against you". Why did he add the last part?

Maybe because he first referred to breaking of the commandment of the Lord and then referring to the Lord in the people that he sinned against.
I could also call out:
“I have sinned against you, against my people and against myself, Lord, for you are the life, the life of my people and my life.”
In all three is the Lord and the Lord alone, because sin separates me from him alone in him, in others and myself.
I’m in darkness after all and out of darkness I cry in confidence of his mercy and only His mercy.
God stands above all creatures. Nevertheless, I am sure he asked Bathsheba for her forgiveness too to prevent her throwing a knife at him.

You ask a good question, and here is one possible explanation:
We are created in the image and likeness of God. When we sin, we are defacing and darkening the image and likeness of Him who created us, and we no longer are giving glory to God.
It is the reverse of this scripture, “Let your light so shine before men, that they might see your good works, and glorify your Father who is in heaven.”

He was revealing that he didn’t sin against anything or anyone else but the true God. A “confirmation” if you will.
