What do the latters on the Chrism stand for

SC= Sacred Chrism

OI= Oil of the Infirm (sick)

not sure if you mean OS or OC (what it is at my parish)= Oil of the Catechumens, used when a non-baptised person is being accepted to the formal conversion state of the RCIA program.
 
Oil of the Sick (OI = Oleum Infirmorum)

Oil of Catechumens (OS = Oleum Sanctum, or OC = Oil of Catechumens)

Sacred Chrism (SC).
