What do the candle, cord, and veil symbolize in a Catholic wedding?

If by “candle” you are referring to a so-called “unity candle,” then none of the symbols you mention are inherent to a Catholic wedding. They are social customs only and not an intrinsic part of the Catholic nuptial liturgy. The unity candle and the cord symbolize unity, and a bride’s veil symbolizes modesty and purity.
