What Do You Put In Your Chili?

I can’t cook anything at all. But my son-in-law makes a delicious chili. Not sure what all unusual things he puts in it except for one thing-bacon. It’s a very meaty chili, and he puts some slices of bacon in it and cooks it a long time. Then takes the bacon out after it’s well cooked (the kids devour the bacon). You really can’t taste the bacon in the chili but it sure deepens the flavor. It’s rich, though. You can’t eat as much of it as regular chili because it’s very filling.
This makes sense…makes a good pork and beans too, but that’s a different topic…

None because you’ve eaten there more recently than I have. :mad: 😛 Last time I got to go there was five years ago! I think I have to get DH to make a road trip this summer so I can get my fix. I know, they sell the pickles in the grocery store and you can order the sauce and dogs online, but it’s not. the. same.

Man, I want a chili sundae now.

My favorite chili is my wife’s.

She uses ground beef, garlic, chili powder, onion, tomato sauce, diced tomatos, whole wheat spaghetti, kidney beans, a bit of balsamic vinegar.

Somehow, it seems the spaghetti makes it “lighter” on the stomach than some of the really heavy chili my son-in-law makes.
 
I have read Greek recipes for tomato sauce-based dishes that have cinnamon in the sauce. Always makes me go :confused: but most Greek food is pretty good.
Maybe Whatevergirl is into Greek Chili, hope that gal in Texas doesn’t see this…🙂

Mine is pretty generic, except I put a couple pieces of uncooked, thick sliced bacon in it and cook all day. Then remove the bacon b/c it is just for flavor!
 
I always put some Lindt 70% dark chocolate in my chili, and a can of Rotel with green chilis. I don’t make it too spicy b/c dd doesn’t like it. DH adds some Frank’s Red Hot.

I don’t know how my chili stacks up by chili experts, but my DH loves it and that is all that matters to me.

I always serve with fresh cornbread. Here’s the recipe:

Thanks for receipe, my wife is great cook, but have to admit, we sometimes cut corners and buy that little blue box to make cornbread…

ps…Frank’s is good, but like the Red Devil, pretty similar…
 
See, that’s the difference between folks that live in ND and those that live in TX… Of course, I live in Nebr, so I can’t talk…:o
We’re not exactly well known for chili up here… . ( I should probably just speak for myself, though.)😉
 
beef cut for chili, chunkier than ground beef, usually chuck
onions and crushed garlic sauteed in oil, (would use lard if I had any but I never buy it)
a packaged chili seasoning mix sold by our local Mexican grocery with several varieties of dried chilis, comino, and so forth ground together
Rotel canned tomatoes with green chilis, one can for each pound of meat.
sprinkle chopped fresh cilantro on top, but I don’t put it in the cooking.

that’s it.

I make a hot soup with small red beans or black beans, no meat, and the same seasonings above, plus a can of tomato paste, but it is not chili, it is spicy bean soup
 
Ok, Ill trust you on that…might get some weird looks from my wife when I pull that stuff off of the spice rack though…She’ll probaby do one of these…:eek:
Some people don’t like ginger, just warning you. lol It can be strong …but the cinammon…just a pinch…it creates mystery within the chili.

She might do one of these after tasting it —>> :bowdown2:

Ok Guys, Here’s what we made today (took some of your suggestions).

1.5 lbs of ground chuck (was chili ground, so larger chunks then usual)

Assorted canned peeled and whole tomatoes. Usually use our own canned, but no garden last summer, so nothing fresh there)

White onions, garlic, celery, chilis, julapeno, green peppers, and red peppers…all diced…

Chili powder, Cocoa powder, cinammon, paparika, worcestershire sauce, brown sugar, kosher salt. and red cooking wine (my wife threw some in since she was using it to cook something else).

Black beans and chili beans added later.

More later on how it turned out…

Ground buffalo, tomatoes and tomato sauce, lots of hot stuff, lots of chili powder, red beans. I use a little sweet stuff in mine too, molasses, but not enough for the taste to come through. Grated cheddar or colby on top.

Usually gotta make a little on the side, sans the hot stuff, for my mother-in-law. (My M-I-L is perfect, otherwise.)

I’ve got a cook that works for me he puts a bit of coffee or a shot of espresso in his Chili. This is in a BIG batch (about 3 gallons) a few drops ought to do in a “normal” batch.

He’s a Kansan - but his Chili is very good.

Hmmm…espresso? Won’t be sleeping well after eating that chili. lol The chili that keeps you awake! 😃

Turned out really nice. A little thinner than I like, but I think I can add more beans maybe to thicken it up. We usually make enough for couple days. I like to lean on the thicker side so not too soupy…Thanks for Cinnamon hint…think that added a little different flavor…
