This is my understanding of BBQ. I am from VA.It means low ‘n’ slow, no matter how you prep or finish. When you’re talking pig, it’s spare ribs and I like a dry rub and a mop now and then of vinegar, finished with a glaze during the last half-hour or so.
As for chicken, gotta have the bird sitting on a beer can. It only takes about an hour and a half and will be the best bird you ever tasted.
All of which reminds me, it’s time to pull out the rig!![]()
I have used the term at “ccokouts,” but really these are two different animals.
