What does being a priest entail besides doing confession and mass?

It depends on the priest’s assignment. Most parish priests also are involved in counseling, visiting the sick, teaching (if not in a school, teaching such things as Sacrement classes), marriage preparation, helping the poor and needy in the parish.
Other priests work in missions where they do everything from farming to digging wells to building homes.
Still others work in schools or universities where they spend a large amount of time in the classroom and with students.
Some work in hospitals or retirement homes caring for the sick and elderly.
Some serve as military chaplains giving spiritual support to Catholics and non-Catholics in the military.
And some live apart from the world in a contemplative life centered around prayer.

How about just the priests in the average medium populated city.

A diocesean parish priest in a medium populated city would be involved in what Corki said in the first line of the post. A pastor would also be involved in the administrative duties of running a parish.
Priests are also required to go on retreat once a year. So you see there is much more to being a priest that what the laity sees on Sunday. Priests have a very full schedule.

Lots of administrative stuff… running a parish is hard!
Blessing lots of medals and unlocking the door to the library (For me at least
)
Making appearances at religious ed classes, helping teach.
Dealing with mean insurance companies for the teachers and workers.
Organizing with the choir director.
Pre-marriage stuff.
RCIA involvement.
Being on call for last rites.
Talking to people who come to inquire about the faith.
Some are exorcists too (too few in the U.S.
)
Keeping an eye on the building and grounds and telling the right people if there’s any problems.
Dealing with the Vatican and the country flags.
Studying more about the faith…

Fr Fox’s timetable may not be the same for every priest but you should be able to get some idea of what a priest does.
