What does Catholicism say about vegetarianism?

Just picked up a tract from my parish church today entitled “Christianity and Vegetarianism”, authored by one Fr. John Dear, S.J., and bearing the “imprimatur” of PETA on the back cover. Has anyone at Catholic Answers been exposed to this, and what, if any, reflection of actual Church teaching is this priest’s claim that vegetarianism is an essential apostolic calling inextricably linked to Christ’s demand of his disciples to live lives of non-violence?
