What is the difference between Catholic and Eastern Orthodox?

I have decided to become a Christian, but I don’t know if I should join the Eastern Orthodox Church or the Catholic Church. Besides the Eastern Church not recognizing the authority of the Pope what is the difference? Why don’t they consider Catholic sacraments valid?
