What is the protocol for genuflecting during Mass?

I’ve lived in several states and 2 countries. I’ve noticed that in some churches we genuflect twice, some only during the consecration, and in one church stand during the consecration. Is this a preference of the priest? do different orders have different protocols? I always find it interesting to attend Mass while away from home to see the differences. While many things are the same, there are differences.
