What are other ways through posture to how respect during gospel
 
Standing up straight and listening attentively, other than that I’m not sure how one can convey respect through posture. Is this a question pertaining to how Eastern Catholics show respect during the gospel reading?
 
Stand up straight and completely turn your body so that you are facing the priest or deacon reading the gospel.

I guess you could fold your hands, too.
 
You can also bow your head slightly each time you hear Our Lord’s name spoken (“Jesus”). That is a very old tradition that only fell out of practice a few decades ago.

All the above are excellent.

If you’re a parent.
Hold your small children so that they can see and hear the Gospeller.

While not exactly “during”:
Participate in singing the Alleluia before, and the post gospel response after.
 
In the ‘other’ church I attended ( 😉 ) the priest et al, would come back down the aisle about halfway, the congregation bowing as they do so. The gospel is then read. The priest et al, returns in the same manner.
I kinda like that.

This tradition is still practiced in the Chaldean Church.
