There is a thread for fasting recipes in Spirituality, but almost every recipe there has fish, eggs, or dairy. I’m starting this thread for Eastern and Oriental Christians to discuss any food issues related to their orthopraxis.
 
I like experimenting in the kitchen during the Fast, but I don’t like cooking very much. So here’s a fast and easy recipe even 6 year olds can do.

My newest creation: banana nut oatmeal. Add banana (sliced, diced, or smashed), nuts, optional raisins, and brown sugar to oatmeal to create a delicious and nutritious breakfast.

I use:
Old Wessex Ltd. 5 Grain Oatmeal (Oats, Rye, Triticale, Barley, Golden Flax. No salt, sugar, additives, preservatives, or cholesterol) cooked according to directions with water or milk alternative (soy, rice, almond, oat).

I add mashed banana and walnut pieces (but almond or pecan would also be good) before cooking. I top with brown sugar when serving.

I am actually begining the most rudementary steps in writing a book for Lenten recipes that will help everyone with proper nutrition during the fast.

All too many times people get ill or do not feel well at all secondary to the diet they are choosing to follow. This causes people to abort the fast.

I hope to put together a good book that will teach people how to better control their blood sugar levels ( among other things ). Too many times people choose meals that spike these levels

You want us to supply you with the material to make and sell a book? I think you have some copyright problems there.

First off, the book would not be sold for any personal profit.

Plenty of yaya recipes are out on the web free for anyone to use.

However providing people with good examples vs. poor examples of foods and recipes is my goal.

Gathering as much info as possible is always a good starting point for this sort of project.

Wonderful! A thread about Lenten food is just what is needed to introduce newcomers to Easter Christian spirituality to a wholly practical and practicable way of ascetic effort… thank you, Woodstock! :bounce:

One of the worst fears (especially for us Mediterranean people) of beginners to Orthodox fasting is the lack of many sauces and salad dressing that were previously thought as essential for a good cuisine.

To compensate for this lack, a Canadian Orthodox site offers the famous “unmayonnaise” recipe:

If I was still able, I would change my original post. In it I said the discussion was intended for Eastern and Oriental Christians to discuss food, but I should have said for any interested people (no matter what their affiliation) to discuss Eastern and Oriental dietary habits. 🙂 Thank you for clarifying.
 
Is there any one meal, recipe, or food item you would not want to make it through the Great Fast without?

Mine would be homemade breads. It makes things so much easier!
 
I have made pizza without cheese substituting a light sauce and a lot of vegetables.

I also like to buy large bags of frozen mixed vegetables (carrots, corn, peas) at Sam’s Club and steam them with rice… Then I will eat some fruit and nuts - especially walnuts and macademia nuts, or peanut butter on bread.

Every year I “rediscover” how much I love good fresh fruit. And every year I wonder “Why do I go back to eating such GARBAGE afterwards???”

A typical meal for me in a fast would likely include rice or pasta tossed with a lot of vegetables tossed in for texture, and a pier of fruit or some nuts.

Because of the work I do, I really have to eat something of substance first thing in the AM - my day begins early and ends a little after noon. This morning I found myself eating apples, carrots, a half of a baggle toasted, and a small sack of peanuts. (the kind you buy in a snack pack for 59¢ here in the US)…

Oatmeal/Cream of wheats/Grits are also of value for AM fair! Or heck, I could eat oatmeal for dinner - I have loved it more than cake since I was a kid.

At a salad bar, you can go alittle crazy - put everything not restricted on your plate and you will be pleasantly suprised at the harmony and contrast you can achieve.

Honestly, when I first started to observe a stricter fast, I was very lucky as my university (bneing very large) had a cafeteria set up for vegetarians… I knew some kids who practice vegan diets really helped me to understand that when not eating meat, cheese, dairy, fish or eggs, there is more out there than a salad with vinagrette out there.

Veggie sandwhiches are also something I enjoy when on the go. America might be known as the “McDonalds Nation” but as of a few years ago, Subway restaraunts actually came to outnumber them in total outlets. When I am in a situation where I need to get “take out” food because of my schedule, getting a veggie sub - sans cheese - with a little vinegar and salt and pepper and mustard, is rather filling.
 
I have no idea what are the additional limits on your lenten diet, but DH is a vegetarian (no meat, no fish, no eggs no dairy) and has no problem maintaining his weight so it can be done. He just eats vegetables, usually with a potato, yam or beans as a base.

I will pass on an old weight watchers recipe for chicken gravy. It is a can of wax beans pureed in the blender, then heated with a boullion cube, you certainly could use vegetable rather than chicken. there is a kosher vegetable boullion cube that really is all vegetable no animal product. it comes in a square “tube” of 6 large cubes wrapped in foil, then paper.
 
I heard a very wise comment come out of the mouth of a babe today. She and her mother were discussing what dinner would be after church. The little girl wasn’t pleased with the options and wanted McDonald’s. Mom was explaining why McDonald’s wasn’t appropriate for the Fast when the little girl said, “When we had meat the other night with Uncle Ray, it made my tummy want to have it more.”

I thought that was a very wise observation for such a small child to realize the source of her temptation. She determined that it would be easier to fast if she wasn’t given meat like that, and she asked her mom to not take her to McDonald’s after all, because that would “make my tummy really want meat and I would have to tell it no, and that would be hard.”

I realized how that child is learning to combat temptations and to realize their source from such a young age by her family including the children in the fast. What a blessing she has, and doesn’t even know it.

The strict fast is no eggs, meat, fish, dairy, wine, or oil. Each individual determines with his spiritual father what degree of the fast to take, depending on his spiritual and physical health.

Your husband’s vegan diet is very similar to the strict fast. It doesn’t sound like it has much variety, so you might also share some recipes I hope others will place here with him.

quite right, his idea is that variety is bad, just makes you go off your diet, like the little girl in the example, once you taste a food you develop a craving for more.
he has fruit, whole or as smoothie in the am, potato or yam with 3-4 veggies for lunch, makes a pot of meatless chili/whole wheat pasta with beans, tomatoes, more veggies that lasts him all week for supper. kids call it “dad chow”
also he likes bean burritos with extra veggies no cheese which is what he usually gets in the way of fast food. he will also order vegetarian entrees at a chinese place, or pizza with all veggies no cheese.

it works for him, lowered his familially high cholesterol from over 500 to under 200, lost 60 lbs, is retired and golfs (walking) every day, plays softball, tennis and raquetball, swims, rides bicycle. Did not work for me, sends blood sugar soaring to eat his way.

I’d like to put in a plug for the benefical health effects of the Orthodox system of fasting which I have followed for the last 30 years.

I have to admit that I have a bad heart problem, and because of it I had my first angiogram two months ago. The cardiologist took it for granted that a man of my age would need stents inserted in the coronary arteries which would be, he assumed, in a bad way and blocked with fat deposits on the walls. So he was surprised to find that the coronary arteries were in good shape and needed no stents. We have decided that this is thanks to the healthy effects of three decades of following an Orthodox fasting regime. 👍
 
DH does go off the plan from time to time, mainly he says because it makes him feel so bad to eat meat or dairy that it reminds him why he chose this diet in the first place. In a public place or as a guest he will eat at least some of what is served. When we entertain, even at daughters’ weddings, we had several vegetarian entrees or side dishes, along with the meat main course, as he is not the only vegetarian in the crowd. He does eat fish a few times a week now as he has been reading how good it is for you, and he does allow a bit more fat, namely olive oil for salads. you should see him at a salad bar, it is a sight to see.

as far as Eastern fasting rules, are soy/grain based meat analogs allowed?

here are some recipes the whole family likes developed in our vegan test kitchen (think Pritikin and MacDougall).
we do buy organic fresh and frozen produce when available.

3-bean Chili
One can each, rinsed and drained of
black beans
small red beans
any of great northern, limas (kids hate these), blackeyed peas, navy beans, or pinto beans
diced tomatoes with green chilis and onions, 2 small cans
1 can tomato paste (no salt added), 2 cans water
1 jar medium salsa
1 diced medium onion
1 diced green pepper
2 ribs celery diced
(I saute the veggies first, he does not bother)
(I add minced garlic, he doesn’t like it)
1 can corn, no salt added
any leftover tomato products in the frig, such as spaghetti sauce, remains of ketchup bottle etc.
He adds a can of mixed veggies, but I don’t like them

Do this in your big spaghetti pot, it fills up fast
Heat over medium until bubbly, mix gently if it seems to think add water, veggie broth, or tomato juice
Makes 6-8 generous bowls depending on size

I top with grated cheese or sour cream and black olives, he does not use dairy, but adds sliced jalapenos, and uses tortilla chips, which I can’t eat
If he is making this to last him a week, he also adds a bag or morningstar farms burger crumbles.

If your family likes it hotter add hot sauce to individual servings, or 1T chili seasoning, or another can of diced green chilis. I add 3-4 long dried red chilis as it cooks and remove them before serving (I also do this with soup stock).

Yes, they are allowed. The older people tend not to use them but the younger ones find that they are beneficial for getting through a hard working day.

How’s that for starters?
 
You might try frijoles (beans) with soy chorizo for flavor. You can add some salsa esp chipotle for extra kick.
