The Process is the secret so read over before starting!

SPAGHETTI AL ESTUARDO
3/4-1 # roma tomatoes cut into bite size pieces (recipe says to peel and seed, I don’t) use garden fresh tomatoes when possible.
3/4 c chopped fresh basil
1/2 cup chopped fresh parsley
1 cup olive oil
3-4 cloves garlic, minced or pressed
1 1/2 # spaghetti

Chop basil, parsley and tomatoes; set aside. In a small skillet over medium heat warm the olive oil. Add the garlic and cook till just soft. Set aside. Cook the spaghetti. Just before the spaghetti is done return the olive oil mixture to low heat. Drain spaghetti and place in large bowl and add the tomatoes, parsley and basil. Mix well. Add the warmed oil mix. Mix from the bottom since the oil tends to pool there. **Serve immediately. **

Wild Alaskan Salmon Patties
1 can wild alaskan salmon
2 eggs beaten
1/2 c minced onion
fresh /dried parsely just a bit
bread crumbs
Dump the opened can of wild alaskan salmon into large bowl.
Do not drain.
pick out the bones etc.
Mix in the eggs. add onion,parsley and 1/2 cup of bread crumbs. Mix well. Add more bread crumbs until the mix will form a loose patty.You do not want peanut butter thickness. Form patties and cook in skillet w/ a bit of butter and olive oil. Cook over med. flame about 3 min ea. side. I then put the cooked patties into a warm 275 degree oven while I cook the reamining mix. I let the last batch sit in oven for 5 min or so to make sure the patty is cooked thru but not over done. I serve these w/ dill mayonnaise. 1 cup mayonnaise 1-2 tsp dill weed mix and chill til ready to serve.
These are very mild and I think the secret is that it is wild alaskan salmon. Serves 4.
 
Gidday. Being a typical Kiwi, ( New Zealander ), I make fish n chips with a salad. I buy some fresh fillets, flour them and fry them. The chips are what some people call fries, which I grill in the oven. This is a life long friday tradition in my family, Lent or not.👍

Twice in my life I have eated the accursed TC. Both times I have ended up sick (once in the hospital) now these were at picnics. But still, I keep a stockpile of Pitchforks and torches just in case it comes to town.

Now the salmon and rice in dill sauce sounds good.
 
My DH and I decided to give up eating meat for our first Lent as a married couple. This is a huge stretch for us since we almost always have meals that include some kind of chicken, beef, or pork entree. We are going to allow ourselves seafood, since it’s not considered to be a meat. So I’m asking for all your best meatless recipes (cheap would be good too!), that have a good amount of protein in them.

Also, I was wondering if anyone out there had some tips about cooking with tofu. I’ve never used it before, and don’t even know where to buy it. Can I just get it at the grocery store, or at a specialty shop?

1/2 bag of Boca brand meatless Crumbles or Morningstar Farms Crumbles (found in the freezer section of the grocery store)
2 cups of low sodium canned diced tomatoes
1/2 to 1 Cup of low- or moderate-fat shredded mozzarella cheese
1/8 tsp dried basil
1/8 tsp dried oregano
1 clove garlic
1 bag of shirataki noodles (soy noodles, found in the vegetable case at the grocery store)

Makes 2 servings.
Puree the tomatoes and the seasonings.
In a skillet, brown the Crumbles (add a little salt and pepper to taste, if you like).
Once the crumbles are cooked through, add crumbles to the puree and marinate for a few hours. The crumbles (which are soy) will absorb the puree.
When you are ready to eat, take the shirataki noodles out of the bag and rinse very well (4-5 minutes) in hot water. This will heat the noodles and will also take away the funky flavor of the liquid they were packaged in. Put half the noodles on a plate, add half the crumbles and half the cheese. To heat it all up and melt the cheese, I microwaved the whole thing for about a minute.

Add a green salad, and you have a very light but delicious meal. It is also high in protein. Everything in it can be adjusted for serving size and taste. If you want more sauce, use more tomatoes.

I wanted spaghetti last week, but my diet does not allow for pasta just yet, so I made up this recipe as a faux spaghetti. It was surprisingly tasty!

I have to say, I used to think so until I went to Germany a few years back and first tried chips with real, thick, creamy, beautiful mayonnaise. Believe you me it’s addictively good …

I know what you talk about. 👍
Now I cannot eat tater tots without dipping them in a dip made with 2/3 mayo and 1/3 mustard. For regular fries I still prefer ketchup.
 
Uhh … well then what I make ain’t a carbonara. Apologies for my ignorance of the correct name.

I have no bacon in it, only the mushroom, eggs, cheese etc, which for a Latin Catholic makes it fine. What would that make it? I don’t think it’s a boscaiola.
Your recipe sounds good, and it is new to me. I would trademark it as Lily’s sauce, you deserve the credit. 👍

China Gormet: Shrimp and Mixed Vegetables in a VERY SPICY Szchewan sauce.
 
:eek: Pre-1500’s means you can’t have potatoes or tomato sauce - the Irish and Italians would have at least as much problem with that as with giving up meat 😉 .

Tonight was red beans and rice with broiled salmon
Aghhhh!!! I forgot about it. We should start considering an ecumenical council. 😃

I have a recipe for Red Lobsters Shrimp Pasta and it is very good.

I’ve been having trouble thinking of things to eat on Fridays… Does anyone know of some good meals that don’t include fish/seafood or beans?
