What's your favorite meatless meal for Lent?

mmmm, that sounds good…I’m the only one in our home that likes eggplant:shrug: Would it freeze well or would it get soggy?
It can freeze quite well, it depends on how you cook it. If you make a thick tomato sauce it will just be fine. If you want to have a lighter fare then you can grill the eggplant instead of frying it. If you fry it use in this order flour, egg wash, and breadcrumbs then use really hot oil because the eggplant is a sponge. If you use 1/2 flour and 1/2 cornstarch you can have a little crispier coating. Just use parmesan cheese do not put any ricotta or mozzarella.

I’ve been having trouble thinking of things to eat on Fridays… Does anyone know of some good meals that don’t include fish/seafood or beans?
Think: Breakfasts for Dinner.

EGGS, scrambled or omelettes, or egg salad or fritatta.

ALSO, pancakes or waffles with syrup or fruit sauces.

Do the juice or sliced fruits with the above.
Have coffee too. (Decaff for dinner!)

Or: Lunch for Dinner.

Grilled Cheese with sliced Tomatoes.
Mac and Cheese.

Sounds good! No worries about the coffee though, caffeine and I don’t mix well together. Get veeeery sleepy. Plus I don’t like the taste.

This is probably a silly question but is it okay to have vegetable soup that has chunks of meat in it so long as I don’t eat the meat? 😊

I’d say no.
You might find diasgreement from others.

For example, another poster said
‘pork and beans are fine but don’t eat the pork.’
I’d say no to that too!

In this country with the variety of foods available to us,
it’s an easy thing to find meatless meals.

I thought no myself, though wasn’t sure so thought I’d ask.

I know it really shouldn’t be as hard as it is but it seems like I can’t think of much outside pizza, eggs, or mac and cheese! Though I am a bit of a picky eater. 😊

Omelets

Polenta

Veg Lasagna

Plain ol’ spaghetti w/marinara, bread and a salad

leftover pasta - heat up skillet w/ olive oil. add spinach tomatoes olives, capers, garlic, zuchinni, onion, etc. etc. a little parm or Feta cheese, a pinch of herbs…

Veg Stir-fry and rice

Saimin - Ramen noodles, veggies and a hard-boiled egg.

Tomato Soup and grilled Cheese

Veggie Pizza (or stromboli)

a big baked potato with Cheddar Cheese and broccoli w/ side salad or soup

Potato-based curries

Falafel (technically there are beans but they are hardly recognizable as such)

Pancakes was what my dad made for meatless dinner (his repertoire was pretty limited)

Veggie base is your friend (no MSG low-sodium)

Corn Chowder/ Veg Soup/ Squash Soup/ Beer Cheese soup, broccoli Cheese soup, Risotto. Use veg base so they taste more substantial.
 
I just made French toast for our supper. We had grilled cheese for lunch. Some of us had tuna salad. Potato soup is good, too. I am also in favor of bread, cheese, and wine for supper. That is SO good if you bake some nice homemade bread, get a couple of different kinds of cheese, and some red wine (or juice, preferably something dark and grape, for the kids and the pregnant/nursing mama).

My husband is out with his buddies for supper, and they are having sushi. 😛

I bet that you can make something similar with the right combination of firm tofu and the proper kind of squash. However, I am no expert and It would take me quite a few unsuccessful trials to get something decent.

I love it and I’m allergic too - you could try this…

Replace the eggplant with firm tofu

1/2 cup seasoned bread crumbs
5 tablespoons grated Parmesan cheese
2 teaspoons dried oregano, divided
salt
black pepper
1 (12 ounce) package firm tofu
2 tablespoons olive oil
1 (8 ounce) can tomato sauce
1/2 teaspoon dried basil
1 clove garlic, minced
4 ounces shredded mozzarella cheese

In a small bowl, combine bread crumbs, 2 tablespoons Parmesan cheese, 1 teaspoon oregano, salt, and black pepper.
Slice tofu into 1/4 inch thick slices, and place in bowl of cold water. One at a time, press tofu slices into crumb mixture, turning to coat all sides.
Heat oil in a medium skillet over medium heat. Cook tofu slices until crisp on one side. Drizzle with a bit more olive oil, turn, and brown on the other side.
Combine tomato sauce, basil, garlic, and remaining oregano. Place a thin layer of sauce in an 8 inch square baking pan. Arrange tofu slices in the pan. Spoon remaining sauce over tofu. Top with shredded mozzarella and remaining 3 tablespoons Parmesan.
Bake at 400 degrees F for 20 minutes.

My husband doesn’t even know this doesn’t have any eggplant in it.
 
People, I am getting ready for tonight’s fish fry hosted by the Knights of Columbus at the parish hall. Then Vespers and Stations of the Cross.👍
