When does the mass officially begin and end?

I’ve been combing over previous threads to find an answer to when the mass officially starts and when it officially ends.

Assuming there is no singing (entrance and recessional hymns) at a mass, I always thought that the mass began when the priest made the sign of the cross and the mass ended when the priest left the altar.

How far off am I?
