the description of David as a youth calls him ruddy, not necessarily red-haired, 1 Samuel 16: 12
 
Do we have any record of Christ of Mary (including Marian appirations)?

Blessed Anne Catherine Emmerich made some statements about the appearance and hair color of various Biblical figures. I think she said that Moses had red (or somewhat reddish) hair. She goes into some detail on things of this kind. You can read her descriptions of Christ and Mary also, (but it is not infallible Scripture).

Mary has appeared differently, I believe, according to the local culture. For instance, the Guadaloupe appearance resembled a young Indian woman.

I think that God is a lot less hung up on personal appearances then we are. But as he knows our hearts he understands that many people relate best to what is similar to themselves. So, God-who really wants to reach us- can appear as any race.

To the OP does it matter what color Mary or Jesus actually were? Who cares if they were short, fat or tall? All that matters is the message that Jesus spread.
