It’s not “woman” it’s “women”–the women who had ministered to Jesus and his disciples in his earthly ministry. Mary is mentioned apart from them, because she is Jesus’ mother, but she too was one of the women who ministered, along with the other women.

In this verse, if the “woman” is not Mary, who is the “woman”?

A partial list would include Mary of Bethany, her sister Martha, Mary Magdalene, Joanna the wife of Chuza, and Susanna, who traveled with Joanna. The Scriptures mention that there were many other women also, who provided for Jesus out of their means.

Our Blessed Mom is the only woman mentioned by name in Acts 1:14. The significance of this is food for thought.

Indeed it is not “woman” singular but “women” plural and some have pointed out who these women could be, certainly the followers of Jesus did not lack women hence you are free to infer who they were. Here is the passage from Acts.
