Who saw the Ascension of Jesus Christ?

While the passage itself does not tells us much (Acts 1:1-11) we find that the very next passage does expand on “who’s who:”
Clearly, St. Mary’s presence in the inner circle of the Believers was common place–we can easily conclude that Mary was there!

Not necessarily. Matthew 28:16 says that eleven disciples went to the mountain where Jesus ascended.

That Matthew fragment does not speak about the Ascension. It speaks about one of the post-Resurrection apparitions of Jesus in Galilee.

According to Acts 1:1-11 only the apostles were present on Mount Olivet when Our Lord ascended into heaven.
Acts 1:2 apostles whom he had chosen.1:3 To them … 1:4 …with them… 1:6…when they… 1:7.,.He said to them… 1:9…as they were looking on, He was lifted up… 1:10 And while they were gazing into heaven as he went, behold, two men stood by them in white robes, 1:11 and said, "Men of Galilee, …1:12 Then they returned to Jerusalem from the mount called Olivet, which is near Jerusalem, a sabbath day’s journey away; 1:13 and when they had entered, they went up to the upper room, where they were staying, Peter and John and James and Andrew, Philip and Thomas, Bartholomew and Matthew, James the son of Alphaeus and Simon the Zealot and Judas the son of James. Note that verse 13 identifies by name who “they” were.

What about the 500 people?

Also scripture says when he ascended an earthquake happened and many previously dead people were seen walking around, their graves had been opened up by the quake…? Surely an event like this would have been seen by much more people…right?

I find it unlikely that only the Eleven would have taken part of this event, specially when the following passage expands this crucial encounter:
For St. Mary and the other women to meet with the Eleven only for prayer would be like going to Mass but not receiving the Eucharist.
Remember, there was no Command for the Eleven to meet with Jesus in secrecy (in the absence of all other followers); and while they were still operating under the fear of being recognized and caught (jailed, beaten, killed), Mary and the other women had followed Jesus throughout His Ministry and at the moment of His Death and Burial… would the women not be remised of their Fellowship with Christ if they “chose” not to travel the extra “mile?” Further, would they not have provided a level security for the men (since having women in a group of men would make the group seem less threatening) as they moved about to the place where they would meet with Jesus?

…the only problem with that is that it does not take into consideration that Scriptures does not include every single occurrence nor detailed Doctrinal information. The women, including St. Mary, were not part of the Twelve so they would not necessarily be spoken off as to give credence or to ascertain any development… there are moments when they are included, but not as the primary source/object (with the exception of Mary of Magdala who, not by intent, was the first to witness the Resurrection).
