Couldn’t an omniscient, omnipotent, perfect god have created us free-willed and perfect?

We will be in heaven.
However if we were made that way from the beginning, there would be no way to demonstrate compassion, self sacrificial love, etc. These things demonstrate a greater good to the greater glory of God.

Are you saying God can’t demonstrate compassion, self sacrificial love etc.? Yet he has all the characteristics you list including free will and perfection. So I don’t get your point.

How could “Adam and Eve” have sinned if they were good, and (not having eaten the fruit yet) didn’t know it was wrong to disobey God? That’s sin, which is evil, and they didn’t know what evil was.

God could have all those things, but there would be no demonstration of those things. More importantly we couldn’t demonstrate those things.
How does God demonstrate justice when there is no need to be just?
How is God “savior” when there is no one to save?
How do you demonstrate compassion when there is no need to be compassionate?
God doesn’t just have these attributes, he IS those attributes. But from a perspective of people being created “perfect”, God would be “Creator” but nothing else, but that isn’t the reality of who God is, because he is more than creator.

I tend to think of it more along the lines of a “Trust” issue. Would they obey God who gave them all these good things and trust him that he knew what was best for them? The temptation of satan is exactly along that line. “For God knows that in what day soever you shall eat of it, your eyes shall be opened; and you shall be as Gods, knowing good and evil” (Gen 3:5).How could “Adam and Eve” have sinned if they were good, and (not having eaten the fruit yet) didn’t know it was wrong to disobey God? The temptation is that God is holding back from you, because he wants to keep his status of authority over you. Eat from the tree, and you won’t need him anymore because you will be Gods and you can decide for yourself what is good and evil without any repercussions.
