Why did the Nicene Creed re-translate "born of" when the Apostles' Creed did not?

Stupid iPad took away my keyboard!

Anyway, the differences between Latin & Greek, and words not quite matching up, has more to do with the schism than actual theology . .

The creed came from an ecumenical council in Greek. The Latin creed is a translation of the creed, not an “equal” or “parallel” text.

Remember, Rome was late among the churches in using the vernacular, and did not even switch to Latin for the liturgy unti the furth century.
Again, this is beside the point for the 21st-century Roman Rite in its Ordinary Form. Current Roman Rite legislation requires translation from the Latin Typical Edition, not from the critical texts, with the exception of the Lectionary readings. Your church may have its own legislation regarding your Divine Liturgy translations.
