Why do we as Catholics celebrate the Sabbath on Sunday?

A 7th Day Adventist entered my office and handed me some “tract” on the Pope and other material. If the world and all its creatures were created in 6 days and God rested on the 7th and made it Holy and the Sabbath. Why do we as Catholics celebrate the Sabbath on Sunday?
