Why do we celebrate the Eucharist daily?

If the Eucharist is the fulfillment of the Passover and the Passover was once a year, why do we celebrate the Eucharist daily?
 
The short answer is because the Church says to do so. It is the Church that has authority over Catholic practice, not the laws of the Old Covenant. One reason why it is fitting to do so is because the Eucharist does not so much fulfill the Passover as it does the miracle of the manna in the wilderness, which was provided daily to the Israelites during their journey to the Promised Land.
