The Law of Moses allows eating meat. It only prohibits certain meats and other foods. This law was made obsolete when Gentiles started being baptised, as the old laws were for keeping Jews seperate from Gentiles. Check out Acts 10 for the details on this change.
The Law of Moses allowed for the eating of many kinds of animals, it was just the unclean animals that were verboten. To quote Archibald “Jonah” Asparagus:
Don’t eat pigs
Don’t eat bats.
Don’t eat beetles, flies, or gnats.
Stay away from all of that.

Now, we are no longer bound by the Moasic dietary restrictions, so if you have a taste for any of these, feel free. (Except for pigs or bats on Ash Wednesday, Good Friday, or Fridays during Lent.)
According to Genesis 9: 1-4, man did not eat meat until after the flood. Afterwards, God gave them “the creatures that move upon the ground and all the fishes of the sea” (NAB) to eat.
