The Good Friday liturgy itself answers your question. During the liturgy is the proclamation, “Behold the wood of the Cross on which hung the salvation of the world.” Acknowledging with gratitude Christ’s sacrifice by kissing a visual representation of that sacrifice is an appropriate response.
