Why does Jesus Refer to Mary as "WOMAN"

Yes. Woman was the most respectful way of addressing any woman. The closest modern equivalent that I can think of is calling your father or grandfather “Sir”. It hasn’t been used widely since the 1960’s but still survives in a few old money families.

Before Sir, you might hear “Father” or “Mother.” Back in those days, turn of the 20th century, we also had “The Widow” for some women and “Master” for boys.

First of all we have to remember when Jesus went to the cross in his last minutes he said to his mother, “Woman, behold your son!” Then He said to the disciple, “Behold your mother!” And from that hour that disciple took her to his own home.

Now “woman” is "a respectful form of address in the olden days . Also,

Since Jesus was the oldest son, it was His responsibility to always see that His mother was cared for. This was Jewish custom and also part of honoring one’s parents in accordance with the commandment. Now, as Jesus knew that His death was near, though He was agonizing in severe pain, knowing that He was about to make the ultimate sacrifice according to His heavenly Father’s plan, His last physical concern was to make provision for His mother, whom He deeply respected and dearly loved. As is written in John 19:27, Jesus’ oral statement before witnesses made the obligation to the beloved disciple (probably John) binding . that’s why the paragraph finishes as. “ And from that hour that disciple took her to his own home”

It also makes perfect sense when we understand the hopostatic union of Christ as God in Spirit and man in flesh , in his last minutes on the cross Jesus spoke to his Heavenly Father as Christ the Son so altho Mary was the mother of Jesus as the Christ she was a woman , yes she was blessed and love and holy but Christ was and is the highest authority.
 
I wonder if a different word was used by Jesus when refering to Mary. I find that many are refered to as simply"woman" while Mary is always called “dear woman” by Jesus as to seemingly identify a difference between her and the rest (you will be called blessed among women).
It seems to me personally that such an interpretation is valid since Jesus said “no one born of “woman” (not “dear woman”) was greater than John the baptist. Was the baptist greater than Jesus? Then, Mary is not to be identified as being among the women specified. At the foot of the cross. Jesus identifies not only the “blessed or dear womanhood” of Mary, but also her motherhood towards believers which clearly ties her to the “new Eve” doctrine.
In Revelation, the woman arrayed with the sun, giving birth to the male child is said to be the mother of all faithfull ( new Eve). To identify her as the church is not a erronious interpretation, in my opinion, as I believe the church as being “both” the body of Christ (son of God) , as Isreal was identified as being the “son of God”.
“And thou [Moses] shalt say unto Pharaoh, Thus saith the Lord, Israel is my son, even my first born.” (Exodus 4:22). This was, I believe, fulfilled in the person of Jesus. Isreal, or the church is also identified as the “spouse of God”. “For your Maker is your husband, the Lord of hosts is his name; and your redeemer is the Holy One of Israel; He is called the God of the whole earth. For the Lord has called you like a woman forsaken and grieved in spirit, like a youthful wife when you were refused, says the Lord.” (Isaiah 54:15-6). This, I believe, was fulfilled in the person of Mary.

The New Adam (and New Eve)

…God sent us the New Adam (Christ) who ends up in a garden where he is tested (Gethsamene Mt. 26:36 - the first Adam is tested in the garden of Eden) The New Adam ends up doing what the first Adam should of done and also ends up un-doing what the first Adam did, bearing the curse triggered by Adams violation of the covenant. What is the curse? Thorns, sweat, nakedness, and death (Gen. 3:18-19) …and our Lord in the garden sweats blood (Lk 22:44), he’s stripped naked (Mt 27:28) and receives a crown of thorns (Mt. 27:29). And where is the first Adam tested? At the tree, but he went to the wrong one, the tree of knowledge of good and evil (Gen 3:6). The New Adam goes to the right one (Jn. 19:17, 1 Peter 2:24). The early church fathers call the cross the tree of life (Gen 2:9), the Eucharist is called the fruit of the tree of life. And who is there at the tree with the New Adam? The New Eve! “Woman!”… “Woman” is what Adam said when he first spotted Eve (Gen 2:23), “Woman” is what our Lord says at the tree of life…“Woman, Behold your son!” (Jn. 19:26). The blood and the water flow, the spirit is given (Jn. 19:34) and Mary is transformed into the New Eve and the archtype of the bride of Christ. The church and the spirit of prophecy enables us to understand the signs of the times in a way that Adam foresook…
