Why does the Catholic church determine the date of Easter this way?

The other day at work a lady I work with said she doesn’t celebrate Easter because it is a “pagan holiday.” Last night at my Catholic Moms’ Study Group, we discussed this. I looked up in the catechism about how the date of Easter is determined, and it said, “Easter is made to fall on the first full moon after the vernal equinox.” WELL, that DID sound “pagan” to us. Why does the Catholic church determine the date of Easter this way? Why don’t they get together and determine a specific date for Easter, the same date each year?

I told my group I’d ask Catholic Answers and get back to them.
