Why don't Catholics celebrate Jewish holidays?

Happy New Year to everyone!

My son-in-law is asking why we don’t celebrate the Jewish holidays: passover, chanukah, etc. I told him the new covenant has replaced the old covenant. This doesn’t seem to satisfy him. What is the correct answer?
