Short answer,Ive been thinking about this a lot. I mean we still follow the 10 commandments, observe the sabbath (albeit in an altered form), and have carried over the Jewish ritual of Tviliah (baptism); besides, *Jesus said “I came not to abolish the law, but to fulfill it.” . So why dont we observe mosaic dietary laws and abstain from pork, shellfish, mixing milk and meat, or practice ritual slaughter? *Is there a historical reason for this?

We’re New covenant people. The old didn’t save nor can it save. Hebrews 8:7 no need for a new covenant if the first was sufficient, Hebrews 8:13
Jesus fulfilled the old. He is our new mediator Hebrews 9:15 , who is Hebrews 10:29 the blood and the promises of the new and eternal covenant Hebrews 13:20
