Why Islam?

That depends on who you talk to. The “Judas Replacement Theory” is a popular one nowadays, but others think Jesus merely passed out on the cross, some think God made his suffering and death and illusion to those watching, some think the passion, crucifixion and resurrection is a lie and it all never happened, others say it’s just a mystery and we shouldn’t worry about it, and countless other examples.
I’m not sure if this has been dealt with verses from the Qur’an, but I didn’t see any, so I am going to respond to this. I don’t know where you heard that Jesus was on the cross (for Islam) when in the Qur’an, in Chapter 4 verses 157-159 it says, They say: “We have killed Isa (Jesus), son of Maryam, the Rasool (Prophet, Messenger) of Allah.” Whereas in fact, neither did they crucify him but they thought they did because the matter was made dubious for them. Those who differ therein are in doubt. They have no real knowledge, they follow nothing but a conjecture, certainly, they did not kill Jesus. Nay! The.fact is that Allah took him up to Himself.
All the.Muslims I know believe this. I did too at one time.

Which translation did you use? The verse you quoted conveniently left out “Christ”. Here is a translation by Yusif Ali:

“That they said (in boast), "We killed Christ Jesus the son of Mary, the Messenger of Allah”

“وَقَوْلِهِمْ إِنَّا قَتَلْنَا الْمَسِيحَ عِيسَى ابْنَ مَرْيَمَ رَسُولَ اللَّهِ”

الْمَسِيحَ means Messiah or Christ. Muslim scholars agree “they boast” was referring to the Jews that boasted. I find it strange the Quran tells us the Jews boasted about killing the Messiah; that’s the last thing the Jews would do.
