Why must men be older now than they were in the past to be ordained priests?

The above link is very interesting. Read the Canonical Age entry. Supposedly, the age of ordination differs from council to council, location to location, and from the diaconate and priesthood to the episcopate.
Very interesting! It appears that the Church is returning to the tradition of ordaining older men. I was not aware that the early Church ordained men at the age of 30 like the Jewish priests.
