We teach that Jesus Himself Instituted the 7 Sacraments. WHY only 7

Sacraments explicit and implicit in the Bible

Each of the seven Sacraments were instituted by Christ. Four explicitly and three, implicitly.
  1. Baptism; explicitly: Jn 3:5 “Jesus answered, "Truly, truly, I say to you, unless one is born of water and the Spirit, he cannot enter the kingdom of God.”
  2. Confirmation: explicitly: John 20:19-22 “Jesus came and stood among them and said to the “Peace be with you. As the Father has sent me, even so I send you.” And when he had said this, he breathed on them, and said to them, "Receive the Holy Spirit.”
  3. Confession explicitly Jn 20:19- 23 “The Lord. Jesus said to them again, “Peace be with you. As the Father has sent me, even so I send you.” And when he had said this, he breathed on them, and said to them, “Receive the Holy Spirit. If you forgive the sins of any, they are forgiven; if you retain the sins of any, they are retained.”
  4. Eucharist explicitly Mt 26: 26-28 & Mk 14:22 & Lk 22: 17-19 & John 6: 45-56 & Paul 1st. Cor. 11: 23-30
And whilst they were at supper, Jesus took bread, and blessed, and broke: and gave to his disciples, and said: Take ye, and eat. This is my body. And taking the chalice, he gave thanks, and gave to them, saying: Drink ye all of this. For this is my blood of the new testament, which shall be shed for many unto remission of sins.
  1. Marriage: implicitly John 2: 1-9 “On the third day there was a marriage at Cana in Galilee, and the mother of Jesus was there; Jesus also was invited to the marriage, with his disciples. When the wine failed, the mother of Jesus said to him, “They have no wine.” And Jesus said to her, “O woman, what have you to do with me? My hour has not yet come.” His mother said to the servants, "Do whatever he tells you."This was the first miracle that Jesus did and one of the few not somehow related to essential elements of our personal salvation. Theologians have attributed the raising of Marriage to a sacramental level as one of the goals and effects of this act.
This is further augmented by Mark 10: 1-9 “ And he left there and went to the region of Judea and beyond the Jordan, and crowds gathered to him again; and again, as his custom was, he taught them. And Pharisees came up and in order to test him asked, “Is it lawful for a man to divorce his wife?” He answered them, “What did Moses command you?” They said, “Moses allowed a man to write a certificate of divorce, and to put her away.” But Jesus said to them, “For your hardness of heart he wrote you this commandment. But from the beginning of creation, God made them male and female.' For this reason a man shall leave his father and mother and be joined to his wife, and the two shall become one flesh.’ So they are no longer two but one flesh. What therefore God has joined together, let not man put asunder.”
  1. Holy Orders/The catholic priesthood implicitly
    The evidence begins when Jesus gives the Keys to the kingdom of heaven to Peter in Mt. 16:15-19 and is extended to the others in Mt. 18:18
Jn 17: 17-20 “Sanctify them in truth. Thy word is truth. As thou hast sent me into the world, I also have sent them into the world. And for them do I sanctify myself, that they also may be sanctified in truth. And not for them only do I pray, but for them also who through their word shall believe in me

The precise instant though is in John 20:21-22 “Jesus said to them again, “Peace be with you. As the Father has sent me, even so I send you.” And when he had said this, he breathed on them, and said to them, "Receive the Holy Spirit.”
  1. The “Last Rites” implicit Matt. 10:1”And he called to him his twelve disciples and gave them authority over unclean spirits, to cast them out, and to heal every disease and every infirmity” & James 5: 13-15 “Is any of you sad? Let him pray. Is he cheerful in mind? Let him sing. [14] Is any man sick among you? Let him bring in the priests of the church, and let them pray over him, anointing him with oil in the name of the Lord. [15] And the prayer of faith shall save the sick man: and the Lord shall raise him up: and if he be in sins, they shall be forgiven him”.
 
Why not only seven? I mean, He’s God, so I’m sure He has a perfectly good reason for instituting the exact Sacraments that He did, no more, no less.

I’m not exactly sure what point you want to get across here.

I think he posts as a “instructional” post. 🤷
 
Excellent Scriptural references.
For Confirmation it is also important to note that there are examples in the Acts where the Apostles confer the gift of the Holy Spirit through the “laying on of hands” after baptism. Acts 8:17 is a good example.
