We do not receive wine at Mass. Both the bread and the wine become the body and blood of Christ. Receiving only one them is receiving both His body and blood. So you are really asking: why both?
Jesus could easily have only used only bread for the Eucharist. But by using wine also, He made the Eucharist a sign that He actually died for us. A body that appears separated from its’ blood is a dead body. So receiving Him under the appearance of both bread and wine is a fuller sign of just Who He is and just who we are, that He would actually choose to die on our behalf. The two separate forms of the Eucharist is a more emphatic statement of His love for us.
