Why was Jesus cruel to the Canaanite woman?

Why did Jesus need to say those demeaning words to the Canaanite woman (“It is not fair to take children’s food and throw it to the dogs”) when at the end he gave in and said, “Woman, great is your faith! Let it be done for you as you wished.”
 
The second sentence you quoted from Jesus answers the question. He very likely was testing the woman’s perseverance in faith.
