This past Saturday I went to confession for the first time in a long time since I am somewhat recently reconnected to the Catholic Church.

I had prepared a little for confession, so I had an idea what it would be like and what I wanted to say.

When the priest said I absolve you, your sins are forgiven,

and then “go in peace” I didn’t know what is customary to say back at that closing.

Can anyone help? Thanks!

In the Rite of Penance, which is very detailed, there is no response to “Go in peace”.

I therefore believe that you can do as you wish: keep quiet, thank the priest, say “Thanks be to God”.

From December 2, 1973 Rite of Penance

47. After the absolution, the priest continues:
Give thanks to the Lord, for he is good.

The penitent concludes:
R . His mercy endures for ever.

Then the priest dismisses the penitent who has been reconciled, saying:
The Lord has freed you from your sins. Go in peace.
or
May the Passion of our Lord Jesus Christ, the intercession of the Blessed Virgin Mary, and of all the saints, whatever good you do and suffering you endure, heal your sins, help you to grow in holiness, and reward you with eternal life. Go in peace.
or
The Lord has freed you from sin. May he bring you safely to his kingdom in heaven. Glory to him for ever.

R . Amen.

You can always say “Deo Gratius” (Thanks be to God, Latin).

Or “Benedicamus Domino” (Let us bless the Lord).

The priest says “go in peace”, and then we immediately come home and log onto CAF and head straight for the “World News” section 🤣

Being a priest these days is a thankless job. So I agree with the comments that recommend thanking him.
