The quote from Hebrews 6:4-7 does in fact refer to
apostasy.
Many bible translations use the term “fallen away” which is the same thing as apostasy.
The Revised Standard Translations says:
“if they then commit
apostasy,…” in verse 6.
The following Protestant biblical commentaries say this about this passage:

“Its teaching was fitted, as it was designed, to check that tendency to
apostatize from Christianity and to return to Judaism which now showed itself among certain Jewish Christians.”
