The documents do state that the Church is Roman. At that time, they were politically, economically, and linguistically so separated from the East that they may not have believed there even was an Eastern (non Latin) church in existence.
This is true. The subrites are all based on the Latin Rite.The rites used within the Latin Church are viewed as sub-rites rather than being full rites of their own. Especially the rites of the religious orders.
