One man trying to do the job of records keeper + scheduler + communications/PR + Compliance + DRE + Youth Minister + homebound coordination + facilities management, heck, simply cleaning/mowing, the poor priest would never sleep or have time to say Mass!

Indeed! Although, I knew a priest at a smaller rural parish who loved mowing the lawn. It was his time of relaxation. Then he got moved to an inner city parish with zero lawn or green space of any kind. He was kind of bummed about that.
 
Not just a protestant thing. Our parish has about 1200 families and 6 paid staff, 3 full time, 2 part time, and 1 paid music director which is less than part time.

Our parish would have a difficult time functioning without staff.
