Cold Weather Comfort Foods

:winter: With the weather temps ranging from the bone-chilling frigid north, to down here in Florida where it’s been pretty-darn-cold, what kind of comfort foods have you been making? I made Crawfish Corn Bisque. It’s my SIL’s recipe. I had it in Slidell in early December when we visited my Brother & SIL for Brother’s birthday. They had all kinds of good New Orleans/Louisiana foods to eat. Everything was delicious! Sil sent me the recipe & I made it for the first time today. DH says he will want it at least twice a month from now on because it’s sooo good;) ! Here’s the recipe, which is real easy:

1 stick Parkay
1 Onion, chopped
3-4 Green Onions, chopped
1 pkg. thawed, frozen Crawfish Tails
1 Pint Half-n-Half
2 Cans Cream of Potato Soup
1 Can Creamed Corn
1 Capful Zatarains Liquid Crab & Shrimp Boil

Melt Parkay in a large pot. Saute onions. Add Crawfish & simmer for 3 or 4 minutes. Add the rest of the ingredients. Simmer for about 25 minutes. That’s it! De-lish!
I doubled all the ingredients to make more
 
our town is hosting a Cajun Fest this weekend, sounds about time for it.

I cooked a pot of Texas basmati brown rice, and made a pot of chicken soup yesterday, tasted great after walking after dusk, quite cold, in the low 50s. yeah I know, shuddup about the weather. I will use the broth and make a low fat version of lemon chicken soup thise evening.

had Greek style yogurt, kalamata olives and feta cheese with artichokes this afternoon, very satisfying on many levels, with a cuke-tomato salad. If I knew a local source for stuffed grapeleaves I would get some.

parishioner gave me a Hungarian nut roll like the ladies used to make and sell at the parish back home that was excellent.

if they were on my diet I would be making pierogies, kraut and kielbase with lots of onions and butter.
 
I made some Chicken soup the other day. It’s one of my favorite things to eat & truly a comfort food in my book! I love Pierogies, too Annie! They’re not on my low-carb diet for sure,though:( . Actually the Crawfish-Corn Bisque wasn’t either but I had a small bowl…well I had to make sure it tasted alright to serve…it being my first time making it and all:D
 
Sounds like an awesome recipe for Lent, too!

I’d try it myself, but mother and I are both allergic to the shell-fishies!
 
I like chili when it’s cold out. Red chili, white chili, doesn’t matter. Good with either corn chips or corn bread.

We’ve had a lot of Tex-Mex types of food lately, though, so I think tomorrow’s dinner will be lentil soup. I have to go to the store so I think I’ll pick up some good rolls to go with it.
 
I’ve been making lots of soups, too. Especially ham, string bean & potato soup. And I did chili and cornbread this week, too. 🙂

Whenever it’s cold out I’m tempted to bake more… but I need to lay off on the cakes and stick to some healthy muffins and breads. :rolleyes:

Marie, in that case you could omit the Crawfish & liquid Crab & Shrimp Boil and add Bacon or Bacon Bits,& maybe a little Cheddar Cheese! Another option is to cut or shred up some Chicken Breast, that would be good, too!

Jen, I love Chili, too! I made a big pot last Sunday. We brought it over to my DD’s house & watched the Steelers game. My next door neighbor loves to make a White Bean Chicken Chili. It’s delicious! I’m with you, I don’t care if it’s red, white, or black bean chili, it’s all good to me!😃

Ruby, that sounds like a yummy soup. I’ll have to try it. I like to make soup, too. Every New Year’s Day I make a pot of Lentil Soup. That’s another comforting soup, which by the way is supposed to bring prosperity to those who eat it on New Year’s Day;) !
 
Just made crock pot ribs last night…so tender they fell right off the bone…YUM!

I’m thinking this would be heaven - and maybe over rice, with a bit of cheese…
 
Red chili with chunky tomatoes and beans, white chili with lots of green chilies, curries (nice and spicy with rice), chicken soup. I’ve also been baking more.
 
I just had crockpot ribs yesterday and they were soooo tender!

My sister made them so I don’t know the recipe, but she just made up the sauce, put it in with the ribs and let it cook for 3 hrs. DH just dumps a bottle of barbecue sauce on them and lets it cook on low the whole day. Delicious, but a pain to clean the crockpot!
 
Ohhh, I love bisques. I will have to try yours, Lucania. I also love turkey/chicken pot pies as ‘comfort’ foods. Yum…so delish. I have made them before, but find throwing a Stouffer’s one in the oven, works just fine. lol 😃

Please try the Bisque, W.G. It’s ridiculously easy to make & sinfully delicious! It’s not figure friendly, but I’m thinking the next splurge time is in two weeks for Superbowl. That sounds like a good time for me to make it again;) !
