I have a hambone left from Christmas in the freezer, I think it is time for navy bean soup, or split pea soup. Maybe I will have time on Sunday, but it is already back up in the 80s by afternoon, tho it does dip to the 40s at night.
made crock pot low-carb beef stew yesterday from the last of the grass-fed beef, which likes to be slow cooked. Squash and turnip instead of potato, plus carrots, celery, onion, peppers, parsley, tomato etc. Left one dried red chili and a couple of bay leaves in for most of the day, took them out for the last hour, so needed no salt or any other seasoning. it was just me so I did not thicken the liquid, but put it over 1/8 C brown rice. very good, and I have 3 more servings in the freezer now.
South Beach seems to be the best way to eat to satisfy both my diabetes doctor and my heart doctor, so that is how I am going. One comfort recipe I do like is the mashed cauliflower, and as soon as they start coming off the truck so the price goes down, I will make that, because mash potatoes is my all time favorite comfort food and this is a great sub.
