Vespers, at least, has had a deaconal form for centuries… the Deacons’ Typica with Communion. I’ve seen references to it in the 1800’s in Alaska (print books for the Russian Orthodox).
Our deacon, deacons when we had two, and I have done Vespers after a work day in the temple, he/they not vested. (Russian ECC) They told me, as has been said, in the absence of a priest to bless, vesting can’t occur. Whatever we’ve done on those occasions was quite abbreviated in time compared to formal Vespers I’ve been to. Our parish is too small and spread out to have Vespers on any regular basis so we go elsewhere, Orthodox parishes, for that.

I know it’s not eastern rite but you might find this Compline fits well with your time constraints:

I found the old Latin Compline online in both Latin and English. I copied the English version and then changed the psalms to the Grail version for the updated language.

It has three psalms a night and seems like it might be do able.

I am going to talk with my priest at my parish this weekend, hopefully I will feel well enough to go.
