Based on what I buy most often, mine would have to be cheddar. I’m a little embarrassed to admit it, since it’s a very humble cheese (and I like many others too) but it tastes so good.
 
I love feta cheese. Also, when I studied abroad a semester in Spain, I loved manchego cheese, especially on a sandwich or with a nice wine. It’s too expensive here for such a small piece to buy it frequently though.
 
I never met a cheese I didn’t like.

If pressed, either a very sharp Wisconsin Cheddar, or Roquefort.

I’m not crazy about gorgonzola or those blue cheeses. But I’m up for any other kind of cheese.

I bought one called ‘Port Salut’ in Quebec last week that was great. It has an orange rind (which is not eaten).

Feta is especially good in a salad, I find.
 
I would have to say that Cheddar and Mozzarella are probably my all-time favorites.

I have difficulty with hard cheeses due to being lactose-intolerant so I tend to eat softer cheeses now.

I especially like Muenster and Havarti. 🙂
 
not a fair question because it depends on what i am eating

but if only one: I’ll second the horseradish white cheddar
 
Aldi sells Transylvanian cave cheese imported from Romania every October.
Supposedly it’s aged in a salt cave and soaked in red wine.
Dry and crumbly, but I like it, and I can feel all goth-y while eating it…
 
I like all cheese, the sharper the better. Also like Aseogo(sp) a lot when I can find it. I get most of my cheeses from Walmart. On homemade bread with real butter. My mother used to make both. Peace.
 
I think cheese is just about my favorite food - top three anyway. I, too, love Cheddar and eat it a lot - macaroni and cheese, omelettes, w/ Wasa crackers and a green apple, with popcorn and a green apple (green apples go really well with cheddar). Tillamook brand - is that national, probably just PNW - fantastic. Also love scalloped potatoes - little onion, potatoes, cheddar, milk, butter - baked. (throw in a teaspoon of beer or a little blue or goat cheese if you really want to improve the flavor; don’t do both)

2nd would be parmesan, which I buy all the time for pasta. Just love it sliced. Provolone for sandwiches. (or Havarti) Fresh mozzarella - the little balls in brine. Feta, goat cheese. Swiss. Cannot live without them.

Probably enough for now. Trying to decide if I should call in a pizza for dinner (yes, cheese) or make mac and cheese - 1/2 c grated parmesan, butter, spaghetti, black pepper, salt. Tons of butter, couple tablespoons. I made this up, then saw it on Martha Stewart bakes. We make the same dish - how cool is that. (shortcut fettucine alfredo)

Yes, it is! I also love it baked in the oven with vegetables. My husband thinks it’s gross, which disappointed me at first, but it just means I don’t have to share. 😉
