Saint-Nectaire. Must be raw milk, preferably fermier (made by the dairy farmer using milk from his/her own herd) as opposed to laitier (made by a third party using milk from several different herds). If God has a favorite cheese, it’s bound to be Saint-Nectaire.
As the cheese has a reputation (according to The Husband) of not traveling well, I’ve had the privilege of eating Saint-Nectaire in Saint-Nectaire (pop. 750). Sublime.
