Is there a protocol for which Eucharistic Prayer is used during mass? Nine times out of ten it seems like #2 is used. Just curious, thanks

The only thing that I can find is the statement made by the Holy Father, through the Congregation for Divine Worship and the Discipline of the Sacraments, to the Neocatechumenal Way when he addressed the liturgical concerns with their particular form of worship. The statement notes that:
  1. The Neocatechumenal Way must also make use of the other Eucharistic Prayers contained in the missal, and not only Eucharistic Prayer II.
I would rather hear something other than EP II, which, unfortunately, I hear on a daily basis when my PV celebrates Mass. 🤷
 
This is what the GIRM says, bolding mine:
  1. The choice among the Eucharistic Prayers found in the Order of Mass is suitably guided
    by the following norms:
    a. Eucharistic Prayer I, that is, the Roman Canon, which may always be used, is
    especially suited to be sung or said on days when there is a proper text for the
    Communicantes (In union with the whole Church) or in Masses endowed with a
    proper form of the Hanc igitur (Father, accept this offering) and also in the
    celebrations of the Apostles and of the Saints mentioned in the Prayer itself; it is
    likewise especially appropriate for Sundays, unless for pastoral considerations
    Eucharistic Prayer III is preferred.
b. Eucharistic Prayer II, on account of its particular features, is more appropriately used
on weekdays or in special circumstances.
Although it has been provided with its own
Preface, it may also be used with other Prefaces, especially those that summarize the
mystery of salvation, such as the common Prefaces. When Mass is celebrated for a
particular dead person, the special formula may be inserted in the place indicated,
namely, before the Memento etiam (Remember our brothers and sisters).
c. Eucharistic Prayer III may be said with any Preface. Its use is preferred on Sundays
and feast days. If, however, this Eucharistic Prayer is used in Masses for the Dead,
the special formula for the dead may be used, to be included at the proper place,
namely, after the Omnes filios tuos ubique dispersos, tibi, clemens Pater, miseratus
coniunge (In mercy and love unite all your children).
d. Eucharistic Prayer IV has an invariable Preface and gives a fuller summary of salvation
history. It may be used when a Mass has no Preface of its own and on Sundays in
Ordinary Time. Because of its structure, no special formula for the dead may be
inserted into this prayer.
 
Most of the time when I go to mass the priest uses either EP2 or EP3. He is more likely to use EP3 on Sundays and then EP2 on weekdays. The only time they use EP1 is on Holy Thursday and at the Easter Vigil. Our priest will sometimes use of the Reconcillliation EPs on Sundays of Advent and Lent. Last Easter (2008) one priest of our parish, ordained in May 2007, use the Eucharistic Prayer, Jesus, the Way to the Father, which I liked. This morning i realized he used EP3 because I remember hearing from east to west. At the convent in town I went to on Easter Tuesday for mass, the priest, a chaplain for them not associated with the area parish used EP1

On a somewhat more sardonic note, my observation is that we pray EP II so often because it’s the shortest.

I really can’t think of any other reason so many priests would choose it so often.

Kind of funny imho.
