For quick and easy, I strongly recommend a microwave pressure cooker.
**tasty veggie soup for 3-4:
**one large beet. (or two small ones)
One large turnip (or two small ones)
one small onion.
one large carrot or parsnip
1/4 to 1/2 cup of dry rice, millet, or barley - not polished (you want the proteins)
Salt and pepper if desired.
put the grain in the pressure cooker.
Dice the veggies into 1/2" cubes (onions, turnips and beets) or 1/4" slices (carrots, parsnips). Add to cooker. shake to minimize height.
Add water to cover with an extra 1/2"
Microwave on high for 15 min, 30% for 10min, remove, let cool 10min, vent, open stir and serve.
If using larger chunks, say, 3/4", add another cup’s worth of water, and 5 min more on high.
**Veggies and Rice:
**Rice (or other grain) - 1 cup dry
Water: 2 cups
veggies: one bag, frozen mixed veggies of choice.
Pressure cooker - grain first, water second, add frozen veggies on top. Salt, pepper on top very lightly.
10 min on high, 10 on 30%. Let cool.
(Outside of fasts, top with chicken breast filets, add an extra 1/2 cup water, and 5 min more on high)
