Fast lenten recipies

5 can soup has been a standby for my family, even when it is not Lent…

1 can (28 oz) diced tomatoes (drained)
1 can (12 oz) whole kernel corn (drained)
1 can (14 oz) mixed vegetables or other veggies (drained)
1 can (19 oz) black beans (drained)
1 can of broth (vegetable preferred for lent)

Open cans, mix, add seasoning to taste (salt, pepper other spices if you want). Heat and eat.

Other options can include leaving out the mixed vegs and adding canned chicken (maybe save that one for after lent? 🙂 ). Warm corn tortillas on the side work with that variation.

3 Lenten Dinner ideas:
  1. 1 drained/rinsed can of black beans
  2. 1 drained can of sweet corn
  3. 1 bottle of Pace picante (mild, medium or hot)
  4. Mix all of the above
  5. Eat using tortilla chips - either baked or fried in coconut oil
Takes less than 3 mins to prepare & is very affordable - a favorite in our home.

Another very inexpensive lenten meal:
  1. Cooked Wild rice
  2. Steamed veggies
  3. With a side of applesauce with cinnamon
One more:
  1. Cooked Whole wheat pasta
  2. Warmed Can of steamed tomatoes in Italian seasoning
  3. Side of steamed broccoli & carrots
  4. With strawberries for dessert
Two lenten breakfast ideas

Toast with natural peanut butter OR banana/berries/ice mixed smoothie

Three lenten lunch ideas

Nuts or seeds & an apple and celery & carrot sticks OR natural peanut butter & apricot preserves sandwich OR whole bean & rice with onion & cilantro burrito
 
Does anyone have any fast lenten recipes for a bachelor with limited funds and who doesn’t have a lot of time to cook due to work?

stuff with eggs especially for breakfast is a cheep and easy way to make good food.

also spinach is also a great staple to many meals healthy not that expensive usually, and can be filling but not alot of calories.

but I could live on scrambled eggs and spinach (not cooked) every morning if I had to.
 
An easy favorite for my kids (they even cook them by theirselves) is quesadillas. They take a corn tortilla (flour if you prefer will work), add shredded cheese, fold in half or roll, and microwave on high for 30 seconds. Dunk in salsa and eat

They also love macaroni and cheese–the kind in the box. It’s cheap and easy too. Beans always work, and do does cheese pizza–or any pizza without meat on it. Fried rice with vegetables or grilled cheese sandwiches with tomato soup. My favorite is potato soup with salad
 
I’ve noticed since I do a black fast I eat foul mudammas (fava beans, cumin, red pepper, lime, olive oil) pretty frequently.

I actually follow a vegan blog on Tumblr and I’ve just been stealing ideas from there and writing things that I’d actually eat (garden-of-vegan.tumblr.com).

Sorry, I didn’t specify…I meant for the Eastern tradition. In the Eastern (Byzantine) tradition eggs are not consumed during Lent.

The standard, which people make adjustments to in consultation with a spiritual father, is more or less a vegan diet for the whole of 40 days.
 
Press water out of tofu and pan fry. Mix with BBQ or oriental seasonings. Try almond milk, soy based yogurt, and quinona (Mexican -sort of like rice but round - has lots of protein). All kinds of beans. Any mix of whole grains, seeds, and/or nuts will make a complete protein. Protein powders that aren’t animal based - hemp, etc.

P.S. there’s vegan ice cream…is that cheating?
 
Thanks for the ideas! Yeah, I prefer eating stuff that is not the imitation vegan products…like imitation soy “meat” etc. Those are more expensive then actual meat!

I’m on the same with that. Plus, it’s so highly processed - turn a bean into something that tastes like meat! Couldn’t be good for our temple of God.

Yeah, and when you think of it, most of the poor in other countries can’t afford to eat meat or dairy every day ANYWAY…it’s really not that big of a deal.

Most of the year I eat rice and beans reguarly anyway
 
For quick and easy, I strongly recommend a microwave pressure cooker.

**tasty veggie soup for 3-4:
**one large beet. (or two small ones)
One large turnip (or two small ones)
one small onion.
one large carrot or parsnip
1/4 to 1/2 cup of dry rice, millet, or barley - not polished (you want the proteins)
Salt and pepper if desired.

put the grain in the pressure cooker.
Dice the veggies into 1/2" cubes (onions, turnips and beets) or 1/4" slices (carrots, parsnips). Add to cooker. shake to minimize height.
Add water to cover with an extra 1/2"
Microwave on high for 15 min, 30% for 10min, remove, let cool 10min, vent, open stir and serve.

If using larger chunks, say, 3/4", add another cup’s worth of water, and 5 min more on high.

**Veggies and Rice:
**Rice (or other grain) - 1 cup dry
Water: 2 cups
veggies: one bag, frozen mixed veggies of choice.

Pressure cooker - grain first, water second, add frozen veggies on top. Salt, pepper on top very lightly.

10 min on high, 10 on 30%. Let cool.
(Outside of fasts, top with chicken breast filets, add an extra 1/2 cup water, and 5 min more on high)

FRUGAL ENOUGH? Just check out any Ukrainian meatless recipe.
Try it, you will be eating GOOD, and left overs to boot

then I have no advice other then Salad Salad Salad, and cooked veggies. 🙂
