I would say never make assumptions about what other animals can and cannot do. we learn new things through science all the time. No I’m not an atheist-so I’m not speaking for anyone who is.

The problem is to distinguish the honest “I don’t know” from the dishonest one that doesn’t want to know.

True, but considering the struggle people have had for millennia over faith and which (if any) deity truly exists it’s fair to take someone at their word when they say “I don’t know”. It would be wrong to claim a person is being untruthful saying they don’t know without evidence to back up such a statement.
