Your local parish should have an RCIA program, Rite of Christian Initiation for Adults. This includes a period of Q&A called Inquiry. Most continue on in the program but some don’t. I had a Baptist that was just “dipping his toes” and ended after the inquiry period.
Catholic Answers is a great place for you to read. Listen to Catholic Answers Live. I also recommend Called to Communion on EWTN with Dr. David Anders who specifically answers questions like yours in a very clear and interesting ways.

You seem to be confusing the Laws (purity laws, food laws, offerings and tithings, circumcision etc.) with the Ten Commandments. To say that no one can keep the law isn’t correct if you’re speaking of the law as we christians understand it. We’re no longer under the old Laws but the Ten Commandments remain. These are the works of love we’re still under… to love God is to keep his commandments. This is what St Paul means when he says ‘the only thing that counts is faith expressing itself through love’, or words to that effect.

That’s whose point?

When Jesus came in the flesh, “the point” had been lost by the very people who should have known better. People like Saul. Jesus came to clarify “the point”

He taught 12 men “the point” made them His Church & promised to be with them (& that Church) until the end of the age.

Today, many are still confused over “the point” & really there can be no fruitful conversation about that point if we both do not recognize Jesus & the work he did, building his Church.

The Church helps us to understand “the point.” If we believe the Church is telling us we have to follow the whole law, or that we must do anything to earn salvation or redemption, then we don’t even understand the Church.
 
Visit an Episcopal Church! It’s services are extremely liturgically organized, it has a healthy respect for the sacraments, and preaching is usually fabulous.

It’ll be a good segue if you’re thinking of getting more Catholic-ness in you’re life!
 
Waking Up Catholic is a good book for Catholics to read to re-educate themselves. I found it very interesting, even as a cradle Catholic.
