Back in March I dried homegrown peppermint for ‘tea’,it is really nice 🙂 Little granddaughter loves picking it fresh and having a little tea party .

do you let your water breathe before you boil it?
No. Does it make a difference in the tea?

According to my chemistry upbringing, boiling rapidly releases dissolved gases, which is like letting the water exhale. I suppose exposure to oxygen at room temperature (letting the water inhale) could have other benefits that would not be obtained by boiling alone. My chemistry background suggests that we should experiment!

my English auntie told me the way to make perfect tea is to let the water breathe, she would fill her tea pot and let it sit on the stove overnight. in the morning she would boil the water.

It could depend if it’s Spring water, treated or rain water perhaps ? Mine is rainwater…My parents still have a wood stove with a kettle on the boil ready for tea making.
