If the only reason to convert to Islam it to “submit” to God, then isn’t that being kinda selfish? There’s no motivation to be in a Loving relationship with your Creator, it’s just out of fear of the Last Day.

I don’t agree with you.
The submission is with complete understanding, out of free will, one one is overwhelmed by the mercy of God and His attributes and decides within himself to become in his image. Where any ego remains in such person? The fear is of wrong doings. Should one always be doing evil things? One has to come out of the sins, so that one is saved.
Just contemplate on the following verses and see there is no ego in what one submits to:
[1:1] In the name of Allah, the Gracious, the Merciful
[1:2] All praise belongs to Allah, Lord of all the worlds,
[1:3] The Gracious, the Merciful,
[1:4] Master of the Day of Judgment.
[1:5] Thee alone do we worship and Thee alone do we implore for help.
[1:6] Guide us in the right path –
[1:7] The path of those on whom Thou hast bestowed Thy blessings, those who have not incurred Thy displeasure, and those who have not gone astray.
